Ricotta Salata is a special cheese from Italy made from sheep's milk. What makes it different? Well, after it's made, it gets pressed to make it firm. Then, it's salted and dried. This cheese isn’t eaten right away; it's kept to age for anywhere between 10 to 90 days.

Ricotta Salata is often tossed in salads, but you can also slice it, crumble it, or grate it over dishes. And even though it’s saltier than the regular ricotta, it's this very saltiness that makes it pop with flavor in any meal.
